3 1/2 lb. baking potatoes
1/2 c. butter, melted
2 1/2 c. shredded cheddar cheese
2 c. sour cream
2 T. green onions or chives
salt and pepper to taste
1/4 tsp. paprika, to sprinkle on top

Directions:
Directions:
Bake potatoes in skins at 400º for 40 minutes or until slightly firm. Cool overnight or a few hours in fridge. Peel and grate potatoes. Heat 2 cups of cheese and butter over low heat until barely melted, stirring constantly. Remove from heat and stir in sour cream, onion, salt and pepper. Fold in potatoes. Pour mixture into a lightly greased 2 1/2 quart casserole, and sprinkle 1/2 cup cheese and paprika on top. Bake at 350º for 30-40 minutes until lightly browned.

This is a great make ahead mashed potato type dish. If you don't have time to wait, these ingredients added to mashed potatoes are delicious! Can sub in cream cheese for a different flavor. Play around with the flavors but the basic measurements are there!
