Ingredients: 1/4 cup of butter 1/2 cup vermicelli 2 cups of chicken Salt to taste

Directions:-Melt butter in a sauce pan over low heat. Be careful not to burn the butter -Break the vermicelli into small pieces as you put them into the pot -Brown the vermicelli in the melted butter over medium low heat. Stir almost constantly to make sure you don't burn the butter or vermicelli. Brown to the point of the vermicelli being a medium brown, not a dark brown. -Stir in the rice. Mix well with the other ingredients. Take off the burner -Add the broth, cover and bring to a boil. Immediately set the burner to simmer and cook for 20 minutes. |

Notes: For the broth, I never use already prepared broth. It is never strong or flavorful enough. There are cubes and powders you can use. My favorite is the "Better than Broth" brand. It doesn't have as many ingredients and seems to have the best flavor. I prepare my broth by filling a 2 cup glass measuring cup and adding almost twice the amount of recommended broth base and microwaving for a couple of minutes. I stir the broth with the water and add to the saucepan.
You can make this vegetarian by using veggie broth. You can make this vegan by also using olive oil instead of butter. Of course an Armenian would be insulted if you made pilaf this way, but it still tastes good!!
