2 tbsp. Cajun seasoning, divided
1 tsp. salt, divided
½ tsp. pepper, divided
4 chicken thighs
½ cup plus 2 tbsp.. oil, divided
½ cup flour
1 large onion, finely chopped
1 red pepper, finely chopped
1 green pepper, finely chopped
2 celery ribs, finely chopped
4 garlic cloves, minced
1 carton chicken broth
2 spicy Italian sausages
2 tbsp. Worcestershire sauce
2 bay leaves

Directions:
Directions:
Mix 1 tbsp. Cajun seasoning, ½ tsp. salt and ¼ tsp. pepper; rub over chicken. In a Dutch oven brown chicken in 2 tbsp. oil; remove from pan.

Add remaining oil to the same pan; stir in flour until blended. Cook and stir over medium-low heat for 10 minutes or until browned (do not burn). Add onion, peppers and celery; cook and stir for 2-3 minutes or until veggies are tender. Add garlic; cook 1 minute longer.

Gradually add chicken stock. Add (uncooked) sausage, Worcestershire sauce, bay leaves, chicken and remaining spices. Bring to a boil. Reduce heat; cover and simmer for 1 hour.

Remove chicken and sausage from pan; shred chicken and slice sausage and return to soup. Serve over rice; top with green onions.
