1 box yellow cake mix
3/4 c. applesauce
4 eggs
1 can (11oz) Mandarin oranges in light syrup

Frosting:
1 container (8oz.) light whipping topping, thawed
1 pkg (3.4oz.) instant vanilla pudding mix
1 can (15.5 oz.) crushed pineapple with juice

1. For the cake: Preheat oven to 350º. In a large bowl,stir together all cake ingredients until moist. Beat by hand for 2 minutes.
2. Coat a 9x13-in. cake pan with non-stick spray. Pour batter into pan. Bake 30-40 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
3. For the frosting: In a large bowl,mix together all frosting ingredients until well blended. Spread over cake. Store in refrigerator.
