1/2 cup olive oil
1/4 cup vegetable oil
3/4 cup dried parsley
4 tsp. dried basil
4 tsp. dried oregano
2 tsp. kosher salt
2 tsp. sugar
1 tsp. black pepper
1/2 tsp. crushed red pepper flakes (or more to taste)
6 cloves fresh garlic, crushed
1 medium onion, chopped fine
4 28oz cans crushed tomatoes
1 12oz can tomato paste
4 cups water

Directions:
Begin by adding both oils to LARGE heavy bottom stockpot, and heat over medium heat. Add all spices, garlic and chopped onions to the heated oil and stir to coat. Add the can of tomato paste and cook about 2 minutes. Add crushed tomatoes and 4 cups water. I usually swish the water into the crushed tomato cans to get the last drops of tomatoes out!

Bring to a hard boil for about 5 minutes stirring constantly to avoid sauce catching on bottom. Reduce heat to low and simmer for approximately 3 hours. It is good to stir this often as it reduces, always scrapping the bottom as it thickens. Your patience will be rewarded with a deep flavorful red sauce!

This makes a large batch of sauce, but it freezes well. I actually make it just to freeze!
