4 oz. bittersweet chocolate,finely chopped
1/2 c. (1 stick) unsalted butter
2/3 c. granulated sugar
2 tsp. vanilla
1 1/2 tsp. espresso powder(I use Starbucks instant)
3 large eggs
1/2 c. unsweetened cocoa
2 tbsp. confectioner's sugar

Heat oven to 375º
Coat 2 mini muffin pan with cooking spray
Combine chocolate and butter and melt. Let cool and whisk in sugar, vanilla,and espresso powder .Whisk in eggs until well combined. Sift cocoa and combine until smooth. Divide into pans, bake 8-12 minutes. Cool on rack, remove from pan and dust with confectioner's sugar.
