Ingredients: 2 c Whole white Rice 1 lg Sweet Onion - chop into large pieces 2- 3 Fresh Plum (roma) tomatoes cut in quarters 2 medium Jalapeño peppers sliced in half 3-4 Toes of Fresh Garlic sliced 3 T canola oil 1.5 T Salt 6 - 8 cups water 1/2 tsp cumin

Directions:In a Lg heavy skillet add oil to coat the bottom of the skillet - Set on Hi Heat Add 2 cups of rice - Brown rice stirring with a fork constantly - just till it turns a bit golden. Next add the Onions, Tomatoes, Jalapeños, cumin and Garlic stir into the rice mixture for a few seconds. Slowly add the water until the rice ingredients are covered (I take it off the burner to add the water). Now add the salt, stir and turn the burner to medium and simmer until the water is cooked off. Take your fork and move the rice to the side to see if the water is cooked off. Taste the rice for tenderness. If not tender you can add more water. "Don't let it burn" Next place the rice in a baking dish and place in the oven at 275º for 20 minutes to allow to dry a bit. |
