1 tablespoon olive oil
1 c. onion, diced
1 red or green bell pepper, diced
2 carrots, diced
3 cloves garlic, minced
4 T. ground cumin
3 T. chili powder
1 pound ground turkey breast
1 tsp. honey
1 (28-ounce) can fire roasted diced tomatoes
12 oz. black Belgian stout
1 chipotle chile in adobo sauce, seeded and minced
2 T. adobo sauce from the can of chipotles
4 T. tomato paste
½ t. salt and freshly ground black pepper
1 (15.5-ounce) can black beans, drained and rinsed
1 (15.5-ounce) can kidney beans, drained and rinsed
1 (15.5-ounce) can pinto beans, drained and rinsed
1 ½ c. frozen corn

1. Heat the oil in large pot over moderate heat. Add the onion, bell pepper and carrots and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the garlic, cumin and chili powder and cook, stirring, for 1 minute.

2. Add the turkey; raise the heat to medium high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the honey, tomatoes, tomato paste, stout, chipotle and adobo sauce, salt and pepper.

3. Simmer, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and corn and cook 20 minutes longer.

Great turkey and bean chili with a really complex flavor. I've made this vegetarian by substituting the turkey with 2 raw, diced sweet potatoes and cooking them with the other vegs.
