"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Scald milk in microwave until a slight scum appears on top. Pour over shortening, sugar, salt, and mashed potatoes. Dissolve yeast in warm water and add to potato mixture. Add eggs and mix well. Add sifted flour slowly, stirring well. Turn out on pastry board and continue to add flour and knead until you have a soft dough. Put in a large bowl to rise. Cover with butter, to keep from drying out. Cover with a towel and let rise for 1 1/2 hours or until about double. Punch down and remove 1/4 of the dough, at a time. Roll out on a floured surface. Melt shortening and spread over the dough. Sprinkle with cinnamon and sugar filling. Roll dough up,slice and place in baking pan. Let rise about 45 minutes covered with a towel. Bake at 350º until lightly browned, 18-20 minutes. Drizzle icing over the top when partially cooled.
