16 oz. Penne Pasta, uncooked
2 Roma Tomatoes
2 Garlic Cloves
3-1/3 cups Heavy Cream
1 Tbs. Olive Oil
3 Chicken Breasts, boneless and skinless cut into small strips
4 Scallions
1/2 cup Parmesan Cheese
5 Tbs. Butter
1 tsp. Cajun seasoning
Salt and pepper to taste

Directions:
Directions:
1. Place a large pot with water on stove. Boil water and add a little olive oil. Add salt when water boils.

2. In a large pan, heat 1 Tbs. of butter and 1 Tbs. olive oil. Once the butter has melted into the oil, add your chicken and season with salt and pepper. Cook until done.

3. While chicken is cooking, dice tomatoes, mince garlic, chop scallions.

4. Drop pasta and cook according to box.

5. Remove chicken from pan and cover it on a separate dish to keep warm.

6. Place remaining 4 Tbs. butter and garlic in the pan you removed the chicken from. Let the garlic saute for 1 minute. Keep from burning or browning. Add heavy cream. When it comes to a light simmer, add parmesan cheese and mix well. Season with salt, pepper, and cajun seasoning.

7. Drain pasta and toss it in the pan with sauce. Mix together. Place pasta in a bowl. Add chicken, tomatoes, and scallions. Mix well. Serve and enjoy with some garlic bread and salad.

I found this recipe on Pinterest, and it is one of my go to meals for when we have guests. It is really good as leftovers and that's awesome since we aren't big fans of leftovers.
