4 Medium Baking Potatoes
4 TBLS Dill Pickle Juice
3 Kosher Dill Spears (finely chopped)
1/4 Cup Fresh Parsley (chopped)
1/2 Cup Sweet Onion (chopped)
1 Green Onion (minced)
2 Hard Cooked Eggs (chopped)
1/2 tsp Celery Salt
Black Pepper

Paprika (for garnish)
Fresh Dill (for garnish)

DRESSING

1/2 Cup Mayonnaise
2 tsp Yellow Mustard
2 tsp Dill Pickle Juice

Directions:
Boil potatoes, drain & cool. Remove skins, dice or slice & place in a large bowl. Add the 4 TBLS pickle juice, pickles, parsley, onion, chives, green onion & eggs. Gently mix with a rubber spatula being careful not to crush potatoes. Add celery salt & pepper to taste.

Meanwhile, in a small bowl, mix mayo, mustard & 2 tsp pickle juice. Pour over potato mixture. Stir gently. Garnish with paprika & sprigs of dill.
