2 (1 1/4 lbs.) pork tenderloins
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
2 T. olive oil
1 T. butter
1 large shallot, minced
1/2 c. peach preserves (can also use apricot or orange)
1/3 c. bourbon
2 T. dijon mustard
1/4 t. dried crushed red pepper
1/2 c. reduced sodium chicken stock

1. Preheat oven to 400º. Sprinkle tenderloins with salt and pepper. Heat up a cast iron or other ovenproof skillet with the olive oil. When hot, sear the tenderloins over medium-high heat for 3-4 minutes per side until nicely browned.

2. Melt butter in a small skillet over medium-high heat; add shallot and saute 2-3 minutes until tender. Remove from heat, stir in peach preserves and next 3 ingredients, stirring often, 1 minute or until the preserves are melted. Pour over tenderloins.

3. Roast at 400º for about 20 minutes or until a meat thermometer inserted in thickest portion registers 150º. Transfer to a cutting board, reserving drippings in skillet. Cover pork loosely with a towel or foil and let stand at least 10 minutes before slicing.

4. Stir stock into reserved drippings and cook over medium-high heat, stirring constantly, about 5 minutes or until reduced by half. Slice tenderloins and pour sauce over.
