2 cups (15 oz. can) Pumpkin
2 cups sugar
2/3 cup butter
1/2 cup water
3 eggs
2-1/2 cups plain flour
2 tsp. soda
1 tsp. salt
1-1/2 tsp. cinnamon
1/2 tsp. cloves
2/3 cup chopped nuts (pecans or walnuts)
2/3 cups raisins or dates (optional)

Heat oven to 325 º. Grease two 9x5-inch loaf pans. In large bowl, cream pumpkin, sugar, butter, water and eggs. Beat 1 minute at medium speed. Mix dry ingredients together and add to pumpkin mix. Beat 1 minute, then stir-in nuts (and raisins if desired). Pour in pans and bake for 50-60 minutes, or until toothpick inserted into center of loaves comes out clean. Remove from oven and cool in pans on wire rack for 15 minutes; then remove loaves from pans. Wrap in plastic or foil to serve, or freeze for use later.
