3 lb. potatoes (about) pre-boiled, till tender when pierced
2 c. sour cream
2 small cans cream of chicken soup
shredded cheddar cheese

Optional:
ham, cubed
broccoli, cut into pieces


Directions:
Directions:
Mix together sour cream and soup. Slice potatoes. In a greased 13x9 inch baking dish, layer 1/2 of potatoes. Salt and pepper to taste. Cover with 1/2 the sauce, repeat and cover with cheese. Bake in a 350º oven 30-45 minutes until brown and bubbly.

This is an easy scalloped potato recipe. I made it a lot when the kids were little. It was an easy lunch. We would add ham and broccoli to make an easy dinner. Often the leftovers were eaten for breakfast.
