1 quart of chicken broth or homemade chicken stock
1 lg. can or 2 small cans of white meat chicken
biscuit mix
milk

Directions:
Mix chicken broth and canned chicken in a large saucepan. You may add a little bit of water (rinse out the chicken cans) if you feel the broth is too rich. While this comes to a boil, make the dumplings. Note: amounts are approximate because I just "eyeball" this when I make it. Use about 1 1/2 cups biscuit mix and add enough milk to make a soft dough. Drop by spoonsful onto boiling broth, turn heat down to a "high" simmer just enough to keep it gently boiling, cover and cook for about 15 minutes or until dumplings are "set" and done. Can sprinkle with parsley flakes to serve. Comfort food for a cold winters' night!
