2 ½ c. graham cracker crumbs
3 tbsp. sugar
6 tbsp. butter or margarine (softened)

Filling
4 eggs
1 c. sugar
3 8oz. package cream cheese (softened)
1 tsp. vanilla
2 tsp. lemon juice
½ pt. dairy sour cream
2 tbsp. sugar
½ tsp. vanilla

Directions:
Directions:
1. Combine cracker crumbs, sugar and butter. Blend well.

2. Assemble 10” spring form pan using flat bottom. Pour crumb mixture into pan, press crumbs onto bottom and up sides to within 1 inch from top.

3. Beat eggs until light and fluffy, add sugar gradually, beating well after each addition.

4. Add softened cream cheese, vanilla and lemon juice. Beat thoroughly.

5. Pour into crumb shell, spread evenly.

6. Bake 30 to 35 minutes at 375º. (Top will not be brown and center may appear slightly underdone.

7. Remove from oven, cool about 1 hour.

8. Combine sour cream, sugar and vanilla and spread evenly over cake.

9. Bake 15 minutes at 400 degrees. (Top will still not be brown.)

10. Sprinkle top with nutmeg, cool. Chill at least 3 hours.

11. To serve, unclamp and remove sides, do not remove flat bottom. Place this on serving dish.
