1- 10 oz box of couscous or quinoa
3 Tbsp olive oil
4 portions salmon fillets (~1.25 pounds)
½ tsp paprika
salt and pepper
4 scallions, chopped
½ cup fresh cilantro, chopped
2 Tbsp fresh lemon juice

Directions:
Directions:
Cook the couscous or quinoa according to directions. In a small bowl, combine the scallions, cilantro, lemon juice, 2 Tbsp oil, and ¼ tsp each salt and pepper. Heat 1 Tbsp of the oil in a large nonstick skillet over medium high heat. Season the salmon with the paprika, ½ tsp salt, and ¼ tsp pepper. Cook until opaque, 3-4 minutes per side. (You can also cook salmon in oven or grill.) Put salmon on top of the couscous or quinoa and drizzle lemon cilantro vinaigrette over both. Serve.
