1 small onion
1 small zucchini
1 small yellow squash
½ green bell pepper
½ red bell pepper
2 large plum tomatoes
1 tbsp. butter or margarine
1 tbsp. olive oil
1 garlic clove, minced
1/3 c. pesto
16 oz. bow tie pasta
1 lb. fresh lump crab-meat, drained (I used fake crab)
Freshly grated Parmesan cheese (optional)

1. Dice first 5 ingredients, set aside.

2. Seed tomatoes, and cut into ¼ inch strips.

3. Melt butter in a large saucepan over medium-low heat: add oil, onion and garlic. Cook stirring often until tender. Stir in tomato and pesto: cook until thoroughly heated and keep warm.

4. Cook pasta according to package directions until almost tender;
Stir in remaining diced vegetables. Cook 1 minute and drain, reserving ¼ cup liquid. Stir reserved liquid into pesto mixture.

5. Combine pasta mixture, pesto mixture, and crab; top with Parmesan cheese.

I think you could substitute cooked chicken for the crab and add or delete other vegetables if you wanted.
