3 T. vegetable oil
1 1/2 c. uncooked rice
1 garlic clove, crushed
3/4 tsp. salt
1/2 medium onion, diced
1 8 ounce can tomato sauce
2 c. chicken broth

Directions:
Directions:
Heat oil in large skillet. Add rice. Cook and stir over medium heat until rice begins to brown. Add garlic, salt, onion, tomato sauce and chicken broth. Reduce heat, cover and simmer, stirring several times to prevent sticking. Continue to simmer for 25 minutes until rice is thoroughly cooked.

Our family didn't make this dish often because I don't like Mexican rice but when I did make it, my family loved it! It is a good side dish to tacos and enchiladas.
