cream cheese
bacon

feta cheese
shredded, smoked pepper jack cheese
fresh cilantro, finely chopped
onion, finely grated

Directions:
Directions:
Cut a slit in peppers. Remove seeds. Fill with cream cheese or a mixture of cream cheese, feta, jack cheese, cilantro and onion.

Wrap with bacon. Secure with a toothpick. Grill or roast in a 425º oven for 15 minutes, or until the peppers are tender and the cheese is brown at the edges and bubbly.

These peppers are addicting! But beware -- it is a little like playing Russian Roulette, because the heat of a pepper depends on the pepper. Barak would make these after a dove shoot and wrap a dove breast around the pepper stuffed with cream cheese and then wrap the whole thing with bacon. Then he would grill it on the barbecue. Amazing!
