1/4 c. margarine
1/3 c. brown sugar
crushed pineapple or sliced apples
1 1/4 c. flour
3/4 c. sugar
2 tsp. baking soda
1/3 c. oil
1 egg
1/2 c. pineapple juice or milk
1 tsp. vanilla

Directions:
Directions:
Drain pineapple and reserve 1/2 c. for cake. Melt margarine in a 9" glass dish in microwave. Add brown sugar and stir. Put about 1/2- 2/3 of the can of crushed pineapple on top. Mix oil, egg, pineapple juice and vanilla. Add dry ingredients and stir well. Pour over the pineapple and cook in microwave until set. Be sure to watch and not over cook. Apples can be used instead of the pineapple. Place apples on top of butter and brown sugar and cook in microwave until tender. Then add cake batter and cook.
