3 c. uncooked rice
3 chicken bouillon cubes, crushed or dissolved
2 T. sugar
1 T. sliced dry garlic or 2 T. minced fresh garlic
1/2 bunch cilantro, chopped
1 T. butter

6 c. boiling water

6 T. lime juice and zest of 2 limes

Grease a 13x9 baking pan. Place rice in pan and sprinkle with the rest of ingredients except water, lime juice and zest. Add boiling water. Cover with foil and bake for 70 minutes in a 350º oven. Fluff with fork and add lime juice and zest.

We served this at Taylor's college graduation and it quickly became a family favorite. It goes well with just about anything and can be made ahead which is very helpful when you need to feed a large crowd. It holds well in the oven. Mrs. O'Bryan served it at Christian and Lee's rehearsal dinner and just did it in the rice cooker. It worked beautifully.
