1 T. oil
1 small red onion, sliced or diced (depending on how you are using the reduction, diced for dressing, sliced for pizza)
3 T. brown sugar
1/2 tsp. salt
1/2 tsp. pepper
2 c. balsamic vinegar

Saute onion in oil until slightly soft. Add the rest of ingredients. Bring to a boil, then reduce to a medium heat. Cook till reduced to 1 cup, about 30 minutes.

This reduction can be used in salad dressings, over meat or drizzled over a Drunken Goat Pizza! We use it mostly on pizza, the sliced red onion is a nice addition to the goat cheese on the pizza.
