2 C. sugar
1 1/2 C. salad or canola oil
3 eggs (well beaten)
3 C. Flour
2 C. Pecans (chopped)
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1-18 oz. can crushed pineapple
1 1/2 tsp. vanilla
2 C. chopped bananas

Directions:
Directions:
Combine all ingredients together, adding in the fruit and nuts at the last. Do not beat; just fold in.

Bake in 350º oven about 1 hour until done. Check with a toothpick or knife in center to check doneness.

Enough batter for one large sheet cake or 2 smaller square pans
