Cut veggies into half or large pieces. Toss with olive oil and season with salt and pepper. Place on hot grill until browned. Some veggies take longer, some shorter, so adjust cooking time.

This is a fun dish in the summer when the garden is producing. I think one of the reasons my kids love vegetables is because they grew up taking pride in their garden, weeding, picking and then cooking their own produce. In the summer mornings growing up, they would go out to the garden and pick sweet peppers and then come back to the house and grill them for breakfast.

These grilled veggies also are great on sandwiches and hamburgers.
