1/2 Package of Large White Beans (Gigandes)
1/2 Bunch Celery (chopped)
4 Carrots (chopped)
2 Large Tomatoes
1 Tbsp Tomato Paste
Salt, Pepper, and Oregano to Taste
Olive Oil

Directions:
Directions:
The night before cooking place beans in a large bowl cover with water to soak.

In a large pot boil beans until white foam comes to the surface. Pour beans in strainer and rinse. Place the beans, celery, carrots, tomatoes, salt, pepper, and oregano in a pot. Cover with water. Dilute tomato paste in some water and add to the mix. Be careful you may need to add some more water to your pot. Cook until beans are soft. Once the beans are cooked place them in a baking pan and place in preheated 350º oven and cook for about half hour.

If you do not presoak the beans they will NEVER COOK.

This is served with Kalamata olives, sardines and toasted bread.
Some people like to add fresh olive oil directly in their plates when served.
