Crust:
3/4 cup flour
1/3 cup quick cooking oats (not instant)
1/4 cup sugar
Pinch of salt
1 stick cold butter
Topping:
2 TBSP peanut butter
3 TBSP preserves (any flavor)
Crumbs:
5 TBSP flour
1 TBSP sugar
2 TBSP brown sugar, packed
6 TBSP quick cooking oats
Punch of salt
3 TBSP cold butter

Directions:
Directions:
Crust: combine flour, oats, sugar and salt in the bowl of a food processor. Pulse briefly to mix. Drop butter by TBSP pieces through the feeding tube, pulsing briefly after each addition. Process just until dough begins to clump together. Press dough into bottom of 9" square baking dish which has been misted with baking spray with flour. Topping: spread peanut butter over dough in pan. Spread preserves over peanut butter. Crumbs: Combine flour, sugars, oats and salt in a food processor and pulse briefly to mix. Drop butter by TBSP pieces pulsing after each addition. Pulse 8-10 times until mixture is crumbly. Sprinkle over mixture in pan. Bake in a preheated, 350º, oven for 30 minutes or until top is golden brown. Cool, then cut into bars.
