Praline topping:
3/4 cup brown sugar, packed
1/3 cup butter
3 TBSP heavy whipping cream
3/4 cup chopped pecans
Batter:
4 eggs
1 2/3 cup sugar
1 cup vegetable oil
2 cups canned pumpkin
1/4 tsp vanilla
2 cups flour
2 tsp baking powder
2 tsp pumpkin pie spice
1 tsp baking soda
1 tsp salt
Topping:
1 3/4 cups heavy whipping cream
1/4 cup powdered sugar
1/4 tsp vanilla
Additional chopped pecans

Praline topping: In a heavy saucepan, combine brown sugar and cream. Cook and stir over low heat until sugar is dissolved. Pour into two well-greased 9" round baking pans. Sprinkle with nuts. Cool. Batter: in large mixing bowl, beat eggs, sugar and oil. Beat in pumpkin and vanilla. Combine the flour, baling powder, pie spice, baling soda and salt. Add to pumpkin mixture and beat just until blended. Carefully spoon over praline topping. Bake at 350º for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely. Topping: In a small mixing bowl beat cream until it begins to thicken. Add powdered sugar and vanilla. Beat until stiff peaks form. Place one layer, praline side up, on a serving plate. Spread with 2/3 of the topping. Top with second layer and remaining topping. Sprinkle with additional pecans if desired. Store in refrigerator.
