Ingredients: 1.5 pounds fingerling potatoes Kosher salt Garlic powder Olive oil
OPTIONAL Dried rosemary Thyme Pepper Zatarain's creole seasoning

Directions:Preheat the oven to 450 degrees.
Line a cookie sheet with aluminum foil and then cover with parchment paper.
Scrub the potatoes and put in a pot of boiling water.
Cook for 10-15 minutes until a fork easily pierces the biggest potatoes.
Rinse and cool.
Spread on a paper towel and gently smash with the bottom of a glass. They should collapses but largely hold together.
Place on the cookie sheet and sprinkle olive oil, salt and garlic power over them. Lift gently to make sure oil gets on the bottom.
You can add any or all of the optional ingredients.
Cook for 15 minutes.
Flip and cook for at least 15 more minutes. You can use a spatula or put a second cookie sheet with parchment on top of the potatoes, flip and put the new parchment paper on the hot sheet and return to the oven.
I cook for up to 30 minutes to get them very crispy on the edges. |
