1c. Lentils, soaked
1 medium Onion
2 Cloved of Garlic, chopped
3 Carrots, chopped
1 medium Potato, quartered
2oz. Olive Oil
10oz. Tomato Sauce
8c. Water
1 Bay Leaf
2 Chicken Bouliion
Sea Salt to taste

Directions:
Soak lentils for 24hours in water.

Chop onions, carrots, and garlic. In medium pot, over high heat, heat oil, carrots and garlic until the garlic begins to brown. Add onions and 1/2tsp salt, sautee until translucient. Add potatoes and bay leaf. Add half can of tomato sauce. Once simmered, add water and bring to a boil. Add boullion and lentils, bring to boil. Reduce to medium heat for 45 minutes.
