2/3 cup sugar
2/3 cup packed brown sugar
1/2 cup stick margarine or butter, softened
1/2 cup shortening (or substitute apple sauce)
1 tsp baking soda
1 tsp ground cinnamon
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp salt
2 large eggs
3 cups quick or old-fashioned oats
1 cup flour
1 cup raisins, chopped nuts, or semisweet chocolate chips, if desired

Directions:
Directions:
Heat over to 375ºF. Mix all ingredients except oats, flour, and raisins in a large bowl. Stir in oats, flour, and raisins. Drop dough by rounded tablespoonfuls about 2 inches apart, onto an ungreased cookie sheet.
Bake 9-11 minutes, or until light brown. Immediately remove from cookie sheet. Cool on wire rack.
