32 oz can pumpkin puree
1 cup raisins
1/4 cup boiling water
1 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup molasses
2 large eggs
1/2 tsp salt
2 1/2 tsp cinnamon
1 1/2 tsp ginger
1/4 tsp nutmeg
1 1/2 cup flour
1 tsp baking soda
1/2 cup toasted wheat germ
2 1/2 cup rolled oats

Line a strainer with cheesecloth; set over a bowl. Pour in pumpkin; close, weigh down with can and let stand for 30 minutes.
Preheat over to 350ºF. In food processor, puree raisins with boiling water.
Cream butter and brown sugar. Add molasses and eggs, and beat one minute. Add raisins and drained pumpkin. Mix.
In medium bowl, combine salt, cinnamon, ginger, nutmeg, flour, baking soda, wheat germ, and oats. Stir. Add dry ingredients to wet mixture.
Spoon batter onto ungreased baking sheets, about 1 1/2" apart. Press down slightly. Bake for 12-14 minutes. Store up to one week.
