Mouthwatering Cinnamon Muffins Recipe

Cooking spray
1/2 cup sugar
1/2 cup milk
1/3 cup vegetable oil
1 egg
1 1/2 cups all-purpose flour (we used whole wheat)
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp ground nutmeg
1/2 cup sugar (we used 1/4 cup)
1 tsp ground cinnamon
1/2 cup (I stick) butter or margarine

1. Heat oven to 350F. Spray just the bottoms of each cup in the muffin pan with the cooking spray. Save for later (you will need it in step 3).

2. Put the first 1/2 cup sugar, the milk and vegetable oil in the medium bowl. Stir with one of the wooden spoons until mixed. Crack the egg on the side of bowl, letting it slip into bowl. Beat with the fork until mixed.

3. Add the flour, baking powder, salt and nutmeg to sugar mixture. Stir just until flour is wet (batter should still be a little lumpy; you don't want it to be smooth). Spoon batter into sprayed muffin cups until cups are about 2/3 full.

4. Bake for 20-25 minutes or until the muffins are golden brown and the toothpick poked into the center of muffin comes out clean.

5. While muffins are baking, mix the second 1/2 cup sugar and the cinnamon in the small bowl. Save for later (you will need this in step 8).

6. Put the butter in the microwave bowl. Cover the bowl with a microwavable waxed paper. Microwave on High for 30 to 45 seconds or until butter is melted. Cool for 5 minutes.

7. Use the pot holders to take muffin pan out of oven. Carefully tip pan on its side to take muffins out of cups. Put muffins on the wire cooling rack. Cool for 5 minutes.

8. First roll muffins in the melted butter. Then roll them in the sugar-cinnamon mixture so they are coated. Serve warm.
