2 carrots, diced
4 stalks celery, diced
1 onion, diced
1 tbsp butter
1 tsp black peppercorns
2 bay leaves
3-4 pounds baby back ribs, trimmed
water

Sauce:
1/2 tsp freshly ground pepper
1/2 tsp salt
1/2 tsp paprika
2 tbsp chili powder
1 tsp cinnamon
1/2 cup minced garlic
1 1/2 cups brown sugar
1 cup apple sauce
1 cup ketchup
1/4 cup hot sauce (Durkee's)
1/2 cup HP Sauce

Directions:
Directions:
Combine sauce ingredients and refrigerate.

Braise carrot, celery and onion in butter in a large pot (large enough to hold ribs) until tender. Add the peppercorns, bay leaves and ribs to the pan, with enough water to halfway cover the ribs. Stir in about 1 1/2 cups of the barbecue sauce, bring to a boil. Cover and simmer utnil the ribs are very tender and almost falling off the bone. Ribs may be removed from the braising liquid and chilled at this point for finishing later.

To finish, place ribs in a single layer in a baking pan in the oven and cover heavily with sauce. Bake at 400F until the sauce bubbles and carmelizes, about 20 minutes. Alternately, grill the ribs slathered with sauce in a covered grill until nicely browned.
