16 oz. gemelli pasta
1 tbsp. cooking oil
1 onion chopped
1 lb. ground beef
1 28 oz. canned tomatoes, chopped and drained
1 ½ tsp. salt
½ c. pesto sauce
1 ½ c. mozzarella cheese, grated
¼ c. Parmesan cheese, grated

Directions:

1. Preheat oven to 400º. Grease a 9 x 13 baking dish.

2. In a large frying pan, heat oil over moderately low heat. Add the onion and cook, stirring occasionally, until it starts to soften, about 3 minutes. Stir in the ground beef and cook, breaking it up, until the meat in so longer pink. Drain off any excess fat. Add the tomatoes and salt to the pan and bring to a simmer. Cook until most of the liquid evaporates, about 10 minutes. Remove the pan from the heat and stir in the pesto sauce.

3. Meanwhile, cook the gemelli pasta according to directions. Toss with the sauce.

4. Put half of the pasta into the prepared baking dish and top with half of the mozzarella and 2 tbsp. of the Parmesan. Repeat with the remaining past, mozzarella and Parmesan. Bake until bubbling, about 15 minutes.

Serve immediately.
