½ medium bunch fresh parsley, chopped or ¼ cup dried parsley
1 large onion, chopped
5 sticks celery, chopped
4 cloves garlic, chopped
4 or 5 green onions, chopped
½ green bell pepper, chopped
15 ounces canned tomato sauce
1 can chicken broth
1 can beef broth
1 bay leaf
salt to taste
¼ tsp. thyme
3 lb. of sausage: smoked, fresh, Polish, any combination.
1 tsp. Cajun seasoning
3 c. uncooked rice

Directions:

1. In a 5 quart pot, cook sausage and then remove from pot.

2. Saute onions, celery, garlic, and green pepper until onions are transparent.

3. Add tomato sauce and about 2 quarts of water. Add sausage and rest of ingredients, except the rice. Let cook until gravy starts to thicken.

4. Add the uncooked rice and cook until rice is done.

Leftovers freeze well. You can substitute cooked chicken for the sausage or use ½ chicken and ½ sausage.

Instead of using 15 oz. of tomato sauce, chicken and beef broth, you can use 45 oz. of tomato sauce.
