1/2 cup chopped onion
6 oz boneless beef sirloin, cut in thin strips
15 oz can stewed tomatoes, undrained
1 cup,kidney beans, drained and rinsed
1 baking potato, diced small
1/2 cup chicken broth
1 tsp cumin
1 tsp chile powder
1 tsp garlic powder

Directions:

Mist 1 1/2 qt microwave-safe casserole with non- stick spray. Add onion and microwave until tender, about 3 minutes. Add remaining ingredients and stir well. Cover and microwave on medium-high until potatoes are tender, about 20 minutes. Stir occasionally. Adjust consistency with more broth, if needed.
