1 ½ c. all-purpose flour
½ c. sugar
2 tsp. baking powder
½ tsp. salt
1 large egg
½ c. milk, plus a little extra
¼ c. vegetable oil
Directions:
Directions:
1. Stir together flour, sugar, baking powder and salt, make a well in the center of mixture.

2. Stir together egg, milk and oil until blended. Add to dry ingredients, stirring just until moistened.

3. Spoon batter into lightly greased muffin pans

4. Bake at 400º for 18 to 20 minutes. Remove from pan immediately.
