1 1/2 lbs. pork tenderloin
2 beaten eggs
1 C. seasoned bread crumbs
Margarine or butter and olive oil
1 large onion, sliced in 1/4" rings
2 green peppers, sliced into strips
1 can tomato soup and 1/2 C. water

Directions:
Directions:
Preheat oven to 350º.

Strip off muscles and fat on tenderloin; cut into pieces and flatten to 1/2" with cleaver. Dip each piece into beaten egg mixture then bread crumbs. Fry in margarine or butter/olive oil mix until browned. Place in 9 x 13 baking dish then top with slices of onions and green peppers. In separate bowl, mix tomato soup with 1/2 soup can of water. Pour tomato soup mix over meat. Cover with foil and bake for 1 hour.
