2 Med Potatoes, peeled and quartered
1 Cup Milk
1 Pkg Active Dry Yeast
1/2 Cup Sugar
2/3 Cup Vegetable Oil
1 Egg
2 tsp Salt
6 to 6 1/2 Cups Bread Flour
Butter or Margarine, melted

Directions:
Directions:
Grease 2 or 3 large 13x9 Baking pans.
Cook potatoes in boiling water until tender, drain, reserving 1/2 cup of the water. Combine potato water and milk and heat until warm (115 deg). Stir in yeast and sugar. Mash potatoes to equal 1 cup. Combine potatoes, egg, oil, salt and yeast mixture. Blend well. add enough flour until stiff dough is formed. Knead about 8 minutes. Place in greased bowl, turning to grease top of dough. Cover and let rise in warm place until doubled in size about 1 and 1/2 hours. Punch down and divide into 4 equal parts. Cut each into 12 pieces and form into balls. Should have 48 rolls. Place in banking pans and let rise about 1 hour. Bake in preheated 400 deg oven for about 13 to 14 min and after removing from oven, brush with melted butter.
