FROZEN CHOPPED OKRA
2 CANS CAMPBELLS SHRIMP GUMBO
ROUX
CRABBOIL

THOSE WERE THE INGREDIENTS AS GIVEN TO ME BY MOM. OVER THE YEARS I HAVE USED THOSE PLUS ADDED SOME.
I START OUT BY BOILING A CHICKEN BREAST IN WATER TO COVER UNTIL TENDER. I REMOVE THE BREAST & CHOP INTO PIECES AND RETURN TO THE PAN. IN SEPARATE SKILLET, I SAUTE THE ONION, PEPPERS AND CELERY IN SOME BUTTER UNTIL TENDER. ADD TO THE CHICKEN ALONG WITH THE OKRA, DICED TOMATOES, SOUP, SOME SAUSAGE LINKS CUT INTO PIECES, A COUPLE CANS OF CRAB MEAT AND CLAMS CANNED AND UNDRAINED. I USUALLY DON'T MAKE A ROUX...I SIMPLY BROWN FLOUR IN A CAST IRON SKILLET IN THE OVEN AND WHEN THE RIGHT COLOR I ADD CHICKEN BROTH TO IT TO MAKE A SMOOTH PASTE BEFORE I ADD IT TO THE GUMBO, A LITTLE AT A TIME. BEFORE YOU ADD THE ROUX, ADD THE SHRIMP AND CRABBOIL TO THE GUMBO.

MOTHER NEVER MEASURED THE INGREDIENTS AND NEITHER HAVE I...IF YOU'RE SERVING A FEW OR A CROWD, YOU JUST HAVE TO EYEBALL THE INGREDIENTS AND ADJUST ACCORDINGLY.
