1 medium onion
4 large potatoes, peeled
1 T fresh lemon juice
2 T matzoh meal
1 extra large egg, room temp
1 tsp salt
1/4 tsp white pepper

Directions:
Directions:
Use small holes of grater to gate onions and potatoes. Add lemon juice and mix together. Drain any liquid immediately. Do not drain again. Mix in lightly beaten egg, matzoh meal. Add salt and pepper. Pour oil to depth of 1/8 inch in non-stick pan. Heat to med. high. Use large spoon (2 T) to drop mixture into hot oil. Fry on both sides until brown. Dry on paper towels.

This was in my mother's handwriting. But whether it was Grandma Auerbach's recipe or Grandma Kanarek's I don't know. Use of pepper makes me think Grandma Auerbach
