2 c. granulated sugar
1 c. Lite Karo syrup
1/2 c. water

Add:
1/4 c. butter
3 c. raw Spanish peanuts

Then add:
2 1/2 tsp. baking soda
1 tsp. vanilla

Directions:
Directions:
Put first ingredients into large pot. Stir well. Place thermometer so it rests on bottom of pan. Cook to 250 º.


Then add butter and peanuts. Stirring constantly. The peanuts are easy to burn keep them moving. Cook to 300º. When you reach 300º turn off heat and add soda and vanilla.

Stir for a second. Pour onto a buttered metal cookie sheet or buttered granite or marble surface. Don't stir and don't break bubbles.

This is Jeff's grandpa's recipe. I remember when we were first married, at Christmas time, Jeff's Grandpa would always have burns on his hands from making the peanut brittle. It was his recipe and his labor of love at Christmas time. I wish the kids could have met him. He was so sweet, so giving and genuinely kind. Jeff has carried on the tradition of making peanut brittle for Christmas and he blesses us with it every Christmas!
