Weekend Buns (Hutterite) Recipe

3 1/2 cups milk
1 TB yeast
1 tsp honey
3 TB butter
1/4 cup chicken lard
1/2 cup sugar
1/4 cup honey
1 small egg
8 cups flour

Directions:
Directions:
Warm milk to lukewarm. Dissolve the yeast along with 1 tsp honey in 1/2 cup milk. Yeast should foam lightly before adding to other ingredients. Melt the butter and lard; combine with milk, honey, sugar and egg, then mix well before adding flour.

Knead into a soft dough. Let the dough rise 1 hour. Knead again. Next, raise for 2 hours. Now you can form the buns. Form each bun in 2 parts, each part the size of a golf ball. Let rise before baking for one hour. Bake at 450ºF for 10-15 minutes or until the tops of the buns are light brown in color. Yields about 30 buns.

Wedding Buns
Instead of using 1/4 cup of chicken lard as in the ordinary weekend buns recipe, use 1/4 cup of butter. Form the buns half the size of the weekend buns.
