Ham bone saved from Thanksgiving (Best if it is a Honey Glazed Ham bone)
1 pkg. 13 or 15 Bean Mix (found in bean aisle at store-I like Cajun blend)
8 c water
1 can diced tomatoes
1 can Rotel
2 cans Black-eyed peas w/slab bacon
1 can Black-eyed peas w/Jalapeņo
2 cans Hunt's Diced tomato w/sweet onion (14.5 oz)
2 c carrots-diced
2 c celery, chopped
1 1/2 c onion (sweet 1015, if possible)
1 tsp. minced garlic

Directions:
Soak 13/15 bag of beans overnight. Drain. Add water and chopped garlic and ham bone. Simmer on medium low for 2 hours or more until ham meat begins to fall off of the bone. Add 1/2 pkg. of seasoning that comes with bean mix.
After 2 + hours, remove ham bone and shred meat off of bone.
Return meat to the mixture. Discard bone. Add carrots, celery, onion and all of the cans of tomatoes, Rotel and Black eyed peas, etc.
Continue to simmer another 45 minutes until fresh veggies are tender.
Season with Tony Chachere and add rest of bean seasoning packet if desired. Taste to see how spicy dish is before adding rest of packet seasoning mix.

This bean recipe is better the 2nd day. Also, freezes well.
