1 lb. lean ground beef
1 to 1 1/2 cup diced jalapeņo cheddar polish sausage
1 cup rice
1 cup diced potatoes
1 cup green beans
1 cup pinto beans
1 cup lentils
1 cup corn
1 cup peas
8 oz. can green chilies
16 oz. can rotel
32 oz. spaghetti sauce (preferably Ragu)
1 cup water

Brown ground beef and season according to taste with salt, pepper, and chili pepper. Peel potatoes and boil until potatoes are cooked but not mushy.Prepare rice as directed on package. Dice sausage into small pieces. Dice potatoes.Once prepared put beef, rice, potatoes, and sausage in slow cooker. Next add green chiles and rotel ( don't drain liquid). Drain liquid of rest off of rest of canned vegetables. If fresh vegetables are used they should be cooked before adding to stew. Add spaghetti sauce and water. Stir and turn crockpot on.

If spicier stew is desired a 2nd can of green chiles can be added or spicy hot rotel and or green chiles can be used. Vegetables can be added or substituted as desired. If in a hurry stew can be cooked on the stove or cooked on high in the slow cooker. Serve with corn bread. Stew is very good with crumbled corn bread added. Can also be served with cheddar cheese, sour cream, and salsa.
