2 pre-baked pie crusts
Filling:
1 qt warm milk
1 cup sugar
4 heaping TBSP corn starch
dash of salt
4eggs, separated
1 tsp vanilla
3 handfuls of coconut

Directions:
Directions:
Mix sugar, salt and corn starch together. Add warm milk and stir. Add 4 egg beaten yolks. Save whites for meringue. Put mixture into double boiler and cook until thick, stirring constantly. Remove from heat and add coconut flakes and vanilla. Pour into crusts. Meringue: Beat egg whites and then add dash of salt, then touch of vanilla. Add 4 heaping TBSP of sugar. Spread over pie filling and sprinkle with coconut. Put pies in 425º oven and cook until brown.

Got this one from my Carol R., my last in house VZ supervisor in Roanoke who moved to Myrtle Beach upon retirement. It's as close to K&W's coconut cream pie as I have found.
