Cake:
2 cups sugar
4 eggs
1 cup Crisco oil
2 cups flour
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1 can pumpkin, not pumpkin pie mix
2 tsp vanilla
Icing:
1 stick butter, softened
8 oz c ream cheese, softened
1 box confectioners sugar, sifted
2 tsp vanilla

Cake: Mix sugar and eggs. Add oil. Beat with a mixer a full 3 minutes. There should be no trace of oil. Add flour. Mix well. Add cinnamon, baking soda and salt. Stir in well. Add pumpkin. Blend. Bake about 55 minutes at 350º. Cool completely before icing. Icing: Cream butter and cream cheese together. Mix in confectioners sugar. Add vanilla. Whip well. Pile it on cooled cake.
