Cake:
1/2 cup butter
1/2 cup crisco
2 cups sugar
5 eggs, separated
2 cups flour
1 tsp soda
1/4 cup cocoa
1 cup buttermilk
1 tsp vanilla
1 cup coconut
1 cup chopped pecans
Icing:
8 oz cream cheese, softened
1 stick margarine, softened
1 tsp vanilla
1 box powdered sugar
1/4 cup cocoa
1 cup chopped pecans

Directions:
Directions:
Cake: Cream butter, Crisco and sugar. Add egg yolks one at a time, beating after each addition. Sift flour, soda and cocoa together. Add alternately with buttermilk, beginning and ending with dry ingredients. Stir in vanilla, coconut and pecans. Fold in stiffly beaten egg whites. pour into 3 layer cake pans, misted with baking spray with flour. Bake at 325º for 25-30 minutes. Cool completely. Icing: Cream together cream cheese and butter. Add vanilla. Sift sugar and cocoa. Beat in a little at a time. Add pecans. Fill and frost cake.

This one came from the "2nd Typically Texas Cookbook" which says it won 1st place in the chocolate cake contest in the 1983 Texas State Fair.
