Cake:
1 pound of carrots (grated by hand)
1 cup of nuts, broken into small pieces (by hand)
2 cups of flour
1 tsp soda
1 tsp baking powder
2 tsp cinnamon
2 cups sugar
3 eggs
1 1/2 cups oil
Icing:
1 stick of margarine, softened
8 oz cream cheese, softened
1 box of powdered sugar
1 cup hand broken nuts
1 tsp vanilla

Directions:

Cake: Mix together flour, soda, baking powder and cinnamon in a bowl. In mixing bowl, mix sugar and eggs, beating after each addition. Add 1 1/2 cups of oil. Add flour mixture. Add carrots and nuts. Pour into three 9" pans misted with baking spray and flour. Bake at 350º for about 45 minutes. Icing: Beat together margarine and cream cheese. Add powdered sugar and vanilla. Mix in chopped nuts. Frost completely cooled cake layers.

Aunt Donna was exacting. She did grate the carrots and break the nuts by hand. I do it the lazy way.
